🏺The story behind the Salt: Fleur de sel or flor de sal is a hand-harvested sea salt collected by workers who scrape only the top layer of salt before it sinks to the bottom of large salt pans. Gathered from the famed salt marshes of Guérande on France’s Atlantic coast, Fleur de Sel is the most delicate and celebrated expression of the region’s thousand‑year salt‑making tradition. Since the Middle Ages, Guérande’s paludiers have guided ocean water through clay‑lined basins, allowing the sun and wind to coax forth a fragile, shimmering layer of salt crystals that forms only on the surface of the brine. These rare “flowers of salt” were once collected exclusively for nobility and remain one of the most prized artisanal salts in the world.
